Lemon Loaf Cake

The Lemon Loaf Cake 🍋  – an exquisitely light and fluffy sponge cake, infused with the zesty, natural flavour and aroma of lemon. The perfect dessert is well-paired with herbal teas, or adds that extra zing to celebration cakes. It’s intense, lemony flavours and scrumptious textures betrays how super simple this cake is to make.

Method

1. Preheat your oven at 150ºC
2. Grease an 8-inch round baking pan and line the sides and bottom with parchment paper and set aside.
3. Cream softened margarine, sugar and lemon zest together until light and fluffy.
4. Add beaten eggs to the butter mixture, mix well then scrape the sides of the bowl down with a spatula.
5. Add sifted self-raising flour; mix the batter until just combined.
6. Pour batter into the baking pan and bake for 25 minutes, or until skewer/toothpick comes out of the cake clean when inserted in the middle of the cake.
