Double trouble never went down so good! Introducing the indulgent, chocolatey sensation that is Double Chocolate Chip Cookies 🍪🍫. This scrumptious yet gooey chewy cookie is a must have for both the avid chocolate lover and dabbler alike. And with this fun simple recipe, you can have freshly-baked, homemade cookies that will rival all others! Perfect recipe to make with the kids too!

Method

    1. Using a stand mixer with the paddle attachment, cream the butter and both sugars together on a medium speed until the mixture becomes light and fluffy (3-4mins). Then add the egg, vanilla and milk and beat on a high speed until fully combined, also take the time to periodically stop the mixer and scrap down the sides and the bottom of the mixing bowl to ensure all the ingredients are completely combined.
    2. In a separate bowl mix together flour, cocoa powder, baking soda and salt.
    3. With the mixer on a low speed add the dry ingredients to the wet, mix until just combined, at this stage also add the chocolate chips and mix until combined.
    4. the cookie dough will be sticky and tacky, scoop (medium sized scoop about 40g) and drop your cookies on a baking tray lined with greaseproof paper, cling film and chill in the refrigerator for 2-3 hours before baking.
    5. Preheat your oven to 175oC
    6. Bake the cookies for  11-12 mins, or just until the cookies edges look set and the middle is still squishy and soft. Leave on the tray for 5 mins to cool then enjoy!
